Colorful Paneer Tikka with Bell Peppers

Ingredients
  

  • 400 g paneer, cubed
  • 100 g onion, cut into chunks
  • 100 g red bell pepper, cut into chunks
  • 100 g yellow bell pepper, cut into chunks
  • 100 g orange bell pepper, cut into chunks
  • 4 tbsp curd (yogurt)
  • 2 tbsp gram flour (besan)
  • 4 tbsp oil
  • 1/2 tsp chaat masala
  • 3/4 tsp garam masala
  • 1 tsp garlic, grated
  • 1 tsp ginger, grated
  • 1 tsp Kashmiri red chilli powder
  • 1/2 tsp black pepper
  • 1 tsp lemon juice
  • 1/2 tsp salt

Method
 

  1. In a large bowl, whisk the curd with gram flour until smooth and lump-free.
  2. Add grated garlic, grated ginger, Kashmiri red chilli powder, garam masala, chaat masala, black pepper, lemon juice and salt. Mix into a smooth marinade.
  3. Add the paneer cubes, onion and all three bell peppers to the marinade. Toss gently to coat every piece evenly, taking care not to break the paneer. Cover and marinate for at least 20 to 30 minutes.
  4. Thread the marinated paneer, onion and bell peppers onto skewers, alternating the colors for an even mix.
  5. Heat 2 tablespoons of oil in a wide pan or grill pan over medium-high heat.
  6. Place the skewers in the pan and sear on all sides for 8 to 10 minutes total, brushing with the remaining oil and turning occasionally, until the paneer and peppers are lightly charred at the edges.
  7. Remove from heat and serve hot with green chutney, sliced onions and lemon wedges, or use as a filling for wraps, sandwiches, rolls or rice bowls.
