Colorful Mix-Veg Sabzi

Ingredients
  

  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ginger, grated
  • 2 medium tomatoes, chopped
  • 1 medium potato, cubed
  • 1 cup cauliflower florets
  • 1 medium carrot, sliced
  • 1/2 cup green peas
  • 1 bell pepper (any color), diced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp red chilli powder
  • 1 tsp garam masala
  • salt to taste
  • 2 tbsp fresh coriander leaves, chopped

Method
 

  1. Heat oil in a wide pan over medium heat. Add cumin seeds and let them splutter for 30 seconds.
  2. Add the chopped onion and saute until golden, about 5 minutes. Add garlic and ginger and cook for 1 minute.
  3. Add the chopped tomatoes and cook until they soften and the oil begins to separate, about 4 minutes.
  4. Add turmeric, coriander powder, cumin powder, and red chilli powder. Stir well to coat the masala.
  5. Add the potato cubes first and stir-fry for 3 minutes, then add cauliflower and carrot. Mix well, cover and cook on low heat for 8 minutes.
  6. Uncover, add green peas and bell pepper. Stir and cook uncovered for a further 5 minutes until all vegetables are tender but still hold their shape.
  7. Sprinkle garam masala and salt to taste. Toss well, then garnish with fresh coriander leaves. Serve hot with roti or rice.

Notes

Swap any vegetable based on what you have — green beans, broccoli, or corn all work well. For extra richness, stir in 1 tbsp of butter at the end.
